This is straight from Sammy as done on Emeril's TV show in 2003. Sammy's one of a kind---owns the Cabo Wabo Cantina in Cabo San Lucas. To learn more about him Go Here.
Heat Scale = Medium
Serves approximately 4 as appetizer, 2 as entree

24 large fresh shrimp -- peeled
Juice of 3 limes
3 shots Cabo Wabo Tequila or other brand
2 cloves garlic -- minced
2 jalapeno chiles -- chopped
1/4 cup choped fresh cilantro leaves
Kosher salt and fresh ground pepper
2 tablespoons peanut oil

Mix all ingredients except peanut oil in a large bowl; cover and marinate in refrigerator at least 30 minutes. Heat oil in a skillet or wok. Strain shrimp and reserve the marinade. Throw the shrimp into the hot pan. Zap them fast--Flip them around! Add marinade and let 50% of the liquid evaporate. Serve over rice (with "Waboritas", Sammy's own Margaritas, as he does, if you wish).
