Here's an easy Tex-Mex lunch dish---and it's figure-friendly, too! I like 2 chimmies per person.

2 whole wheat flour tortillas -- 10"
2 tablespoons low-fat cream cheese
6 ounces pregrilled chicken breast strips
1/2 cup shredded vegetables -- *
1/2 cup shredded lot-fat Cheddar cheese
1/4 cup salsa

* Choice of shredded lettuce, finely shredded cabbage, thin strips of carrots, red and green bell peppers, zucchini; Can spice it up with some chopped green chiles.

Preheat oven to 350 F. Spread each tortilla with 1 tablespoon cream cheese. Top each with ne-half of the chicken and vegetables. Roll up tightly and place seam side down on prepared baking pan. Bake 10 minutes or until tortillas are golden and crisp.

Serve with shredded Cheddar and salsa.
